Greek Chicken
A recipe from Greece.
Ingredients: 2-4 boneless, skinless chicken breasts (or whatever parts of the chicken you like) 2/3 cup dry white wine. Chardonnay is best. Juice of 3-4 lemons. 1 or 2 cloves fresh garlic. Fresh ground oregano. 1/2 stick of butter Put chicken into oven safe pan w/cover. Put all ingredients in with it. Use as much oregano as you like. I just pour it in. It usually comes out to about 3-4 Tablespoons. Bake at 400 for about an hour. Serve with your favorite rice. This goes perfect with Rice Pilaf. Spoon the juice all over your chicken and rice and maybe even sqeeze a lemon over it all too. Enjoy. I have been making this for years, so the measurements are approximate. Experiment. Just make sure to cook long enough so you wont taste the alcohol. |
