This combines the request for beef as well as the pasta dish. PLUS - it only takes 20 minutes to prepare!!
SERVES 4 INGREDIENTS: 1 lb. sirloin tip steak, cut into 1/2-inch cubes 1 tsp. vegetable oil (this can be replaced with a fat free cooking spray) 2 cloves garlic, minced 1 (16 oz.) package stir fry blend frozen vegetables, thawed & drained (you can cut up fresh vegetables if you wish) 1/2 cup grated Parmesan cheese 1/2 cup chopped parsley 1 (9 oz.) package angel hair pasta 1/2 cup skim milk PREPERATION: 1. In medium-sized skillet, brown beef and minced garlic in oil over medium-high heat for about 2-3 minutes. Add vegetables and stir-fry just until vegetables are hot, about 3 minutes. 2. Mix Parmesan cheese and parsley. Divide mixture into 2 equal parts. 3. Cook pasta according to package directions; drain. Toss with 1/2 of cheese/parsley mixture and milk. 4. Divide pasta evenly among 4 plates. Top with beef mixture. Sprinkle with remaining cheese and parsley. Serve immediately. per serving: Cal 463, Fat 14g, Sat.
