Here is another nutritious treat that will appeal to your sweet tooth!! It's good for you and just plain - well - GOOD! It's loaded with protein and carbohydrate.
INGREDIENTS: 1/2 cup rice (UNCOOKED) 4 cups low fat milk (skim or 1%) 1 egg 1 tsp vanilla 1/2 tsp nutmeg 1/2 cup sugar 1/2 tsp salt 1/2 cup raisins (MMMMM) Light whipped topping (optional) Butter flavored nonstick cooking spray Wash rice thoroughly in running water. Combine with remaining ingredients in large bowl, then pour into a 2 quart baking dish sprayed with the cooking spray. Bake at 300 degrees F for two hours or until rice is tender, stirring several times during the first hour. Top with light whipped topping if desired and sprinkle with cinnamon. You can also add a cherry on top of the whipped cream just for more of a touch of sweetness and it looks good too. MAKES 6 SERVINGS PER SERVING: 244 calories, 8g protein, 48g carbs, 3g fat, 1g fiber I don't normally like rice pudding, but to my surprise... I liked this. Must have been the crappy way my grandmother prepared it. LOL ENJOY! Juicee
