Almond & Tarragon Chicken Salad

Here is an easy recipe for you guys. You can make alot and store it in individual containers.

Ingre.
2 10oz cans of white chicken (drain)
1/4 cup of peeled and (small) diced celery.
1/4 cup of sliced almonds (toasted)
1 oz of Lemon Juice.
3 tablespoons of chopped Tarragon.
Salt and Pepper to taste.
1/2 cup of Light Mayo or Regular Mayo

Mix everything together and chow down! High protein, low carbs, low fat and real tasty. You will have to toast the almonds in the oven for about 5 min at 350. Or you can use the George Forman Grill if you have one. Let me know how you like it. Also if you are on the Atkins or a Keto Diet substitute the light mayo for good ol' regular mayo. Dont over mix so you dont beak-up all the nice chicken chunks.

I forgot you can add a 1 pound box of cooked pasta to it for carbs and taste. Use rotini (spiral) pasta it hold more of the flavor. You can also add cherry tomatoes if your gonna eat it within a day or two. Dont store it with the tomatoes for too long as they get mushy and sour!

I'm definatley gonna try that!! Just reading that made me hungry. Great recipe. Could I use tuna instead of chicken? And where do I get this tarragon? Is it a vegetable or a spice? I've just never heard of it.

Not sure about. Dont know how it would taste with the almonds. Try it and let us know.

You can find tarragon in the spice aisle of your local grocery store!

It's an herb btw. You can probably find it in the produce aisle if a grocery store near you sells fresh herbs and spices. This recipe probably would be best with FRESH tarragon, which is why it says "chopped".
