This one isn't one to be made quick unless you want to skip the marinating part, but I wouldn't recommend it. It adds to the flavor. MMM
----MAGIC MUSHROOMS---- (not that kind guys J ) SERVES 6 I’m not sure if you can find the mushrooms that they speak of in a regular grocery store. I am not a fan of mushrooms, but this sounded good. You can use your discretion as to whether you want to go look for these kinds. **NOTE** The mushrooms need to be marinated for a few hours. Just a warning in case you wanted a quickie meal. Per Portion – 33 calories, 2g protein, 1g fat, 5g carbs 8 oz Shiitake mushrooms 8 oz Oyster mushrooms 8 oz Snow mushrooms 1 Tsp dried Oregano 1 Tsp Rosemary 1 Tsp Thyme 8 Tbsp chopped parsley (6 Tbsp if dried) 3 Shallots, well chopped 1 Tsp olive oil Juice of 2 limes (medium to large) ΒΌ tsp pepper Lettuce greens of choice (Romaine lettuce has more nutrients – FYI) PREPERATION: 1. Remove stems from mushrooms. Clean mushrooms gently with damp paper towel 2. Chop all herbs together 3. Mix olive oil and lime juice; then add pepper & herbs 4. Marinate mushrooms and shallots in seasoned oil/lime mixture for about 2-3 hours (the longer the better) 5. Drain mushrooms and shallots and sautee in a non-stick frying pan for about 5 minutes turning frequently. a. An alternative to the frying pan would be to pre-heat the oven to 400 degrees F, and put them in there for about 15 minutes, stirring several times. 6. Serve on the greens of your choice!
