Post QUICKIE THINGS TO EAT

----MELON AND PROSCIUTTO----

Slice 1/4, 5 inch cantaloupe and wrap each slice in thin prosciutto slices (in case you don't know what this is, it's a meat - ham to be exact - and you will find it in the deli section). Arrange the wrapped melon slices on a plate and add a couple of wedges of lime to squeeze over them. Keep the peppermill handy. It's delish with freshly ground pepper.

Estimated Prepare time - 10 minutes

PER SERVING:

CARBS: 10g
PROTEIN: 4 g

----CREAMED CHIPPED BEEF WITH MUSHROOMS----

Stouffer's creamed chipped beef has 5g carbs per 1/2 cup. Add 1/4 cup sauteed mushrooms, 1 tbsp minced scallions, and a dash of tobasco. (Serve it over 10 steamed spears of fresh asparagus for an extra 5 grams of carbs)

Prep time - about 15 minutes total

PER SERVING:

CARBS: 7g (depending on serving preference)
PROTEIN: 9g protein

ewwwww, are you serious about the melon and prosciutto thing? fruit and lunchmeat sounds like 2 things that shouldn't go together. but i shouldn't knock it til i've tried it, right?

NO SERIOUSLY! It does sound icky, but we tried it (I was VERY apprehensive) and it was actually pretty good. The sweetness of the cantaloupe really added to the taste of the ham. Pepper added a bit too. Don't knock it until you try it. <img border="0" title="" alt="[Wink]" src="wink.gif" />
