Post Basil Chicken Salad

This recipe requires a little bit of chopping, but let me tell you - it's worth it! Good source of protein as well as low carbs.

3 cups cooked chicken, cubed
1 1/2 cup diced celery
1/4 cup chopped chives or scallion
1 cup sour cream
1 1/2 cups chopped fresh Basil

Salt/pepper to taste

In a large bowl, combine chicken, celery, chives, sour cream, and basil;
mix lightly with a fork. Cover and refridgerate for at least 2 hours.
Just before serving, add salt and pepper to taste.

The chicken can be cut down a bit, but if you buy a pack of chicken breasts, that should be perfect. Makes 6 servings (if you have small ones.

If you don't want to have all of those ingredients, the amounts, it's easy to just put in to your own taste.

Sounds Awesome....Gonna have to try this!!!!

Have any high protein cajun dishes you could share...gumbo, fillets, etc., I love spicy dishes, but also looking for body friendly foods!!! <img border="0" title="" alt="[Wink]" src="wink.gif" />
