This recipe requires a little bit of chopping, but let me tell you - it's worth it! Good source of protein as well as low carbs.
3 cups cooked chicken, cubed 1 1/2 cup diced celery 1/4 cup chopped chives or scallion 1 cup sour cream 1 1/2 cups chopped fresh Basil Salt/pepper to taste In a large bowl, combine chicken, celery, chives, sour cream, and basil; mix lightly with a fork. Cover and refridgerate for at least 2 hours. Just before serving, add salt and pepper to taste. The chicken can be cut down a bit, but if you buy a pack of chicken breasts, that should be perfect. Makes 6 servings (if you have small ones. If you don't want to have all of those ingredients, the amounts, it's easy to just put in to your own taste. Enjoy!
