This delicious dish should be done on an average of 30 minutes!! It serves 6 people, however if you would like to cut that in half, simply use HALF of the ingredients suggested!!
INGREDIENTS: 2 lbs. top sirloin, cut into 3/4-inch medallions 2 tsp. black pepper, freshly ground 1 Tbsp. olive oil (I prefer extra virgin) 1 medium red onion, thinly sliced 3 garlic cloves, minced 1/2 cup brandy (the alcohol will evaporate during cooking!!) 1 (14 oz.) can Italian plum tomatoes, coarsely chopped 1/2 cup sundried tomatoes in oil, cut into 1/4-inch strips (do not have to be in oil, you can simply pick up some sundried tomatoes and put them in water to lessen the fat and calories) 2/3 cup black olives, pitted and sliced 1/2 tsp. sugar 2/3 cup chopped fresh parsley PREPERATION: 1. Rub both sides of beef with pepper. Broil or grill steak 3 inches from heat for 2 to three minutes per side. 2. Add oil to pan and sauté onions until brown. 3. Add garlic and sauté 2 to 3 minutes. 4. Add brandy, plum tomatoes, sundried tomatoes, olives and sugar; bring to boil. Reduce until thickened, about 4 minutes. 5. Stir in parsley.
