Post Another no cook cuisine... YUMMY!

This is one of my personal quick easy recipies. I hope you all enjoy it as much as my husband and I did when I first made it!

Cool Chicken Wraps with Guacamole

MEAL SUGGESTION:
Serve this all-in-one meal with a wedge of cantalope and watermelon if desired. Strawberries go well too on the side!

1/2 red onion
1 red chili, seeded
1/2 bunch cilantro
3/4 small cucumber
6 oz prepackaged skinless chicken breasts, (approximately 3 - 4 small to medium breasts according to how thick you want your wraps) chopped
1 oz crumbled feta cheese (optional)
1/2 cup guacamole
Lime juice (you can use a small lime, squeezed)
paprika
4 flour tortillas

In a food processor, finely chop onion and chili, and put into a bowl. Rinse processor and repeat process with cilantro and cucumber. Add chicken. In a seperate small bowl, mix guacamole with feta cheese (if you chose to use). Add a touch of lime juice and a dash of paprika. Spread guacamole down the middle of each tortilla, add equal parts of chicken and vegetable mixture, and roll up. For a more colorful dish, try tomato-basil or spinach flavored tortillas (the spinach ones were my favorite... my husband prefers the tomato-basil... these can be found in the gourmet section of your grocery store usually). This makes two servings.

Per serving nutritional info (2 wraps is a serving): 435 calories, 26g protein, 50g carbs, 17g fat (mostly unsaturated!!) and 5g fiber.
