Post New recipe - SAGE CHICKEN AND RICE

Calories per serving - 391
Grams of fat per serving - 3.9 g

Ingredients -
1 large onion (chopped)
1 garlic clove (you can either put in whole to be picked out later, or you can mince it finely)
2 celery stalks
2 carrots, diced
2 sprigs fresh sage
1 1/4 cups chicken stock (canned or you can make it with boullion cubes and water! make sure it's tangy to add a good flavor)
12 oz bonelesss, skinless chicken breasts
1 1/3 cups mixed brown and wild rice
14 ounces chopped tomatoes (canned will work well)
dash of tobasco sauce
2 medium zucchinni, trimmed and thinly sliced
3 1/2 ounces of lean ham (smoked is delish in this dish)
Salt and pepper
fresh sage to garnish

TO SERVE:
Salad greens
crusty bread

1>> Place the onion, garlic, celery, carrots, and sprigs of fresh sage in a large saucepan and pour in the chicken stock. Bring to a boil, cover the pan, and simmer for 5 minutes.

2>> Cut the chicken into 1 inch cubes. Add the chicken to the pan containing the vegetables, cover the pan, and continue to cook for a further 5 minutes.

3>> Stir in the rice and chopped tomatoes. Add a dash of Tabasco sauce to taste and season with salt and pepper to taste. Bring to a boil, cover, and simmer for 25 minutes.

4>> Stir in the sliced zucchini and diced ham and continue to cook, uncovered for a further 10 minutes, stirring occassionally, until the rice is just tender.

5>> Remove and discard the sprigs of sage. Garnish with a few sage leaves and serve with a salad greens and fresh crusty bread.

TIP: I found that with this recipe the chicken was delicious if you marinade it for a couple of hours in a sauce. Try a teriyaki sauce found in the oriental aisle of a supermarket. That was very tasty!

ALSO - if you cannot find fresh sage, use 1 tsp of dried sage in step one.

MORE TO COME! Protein filled one is next. I found my Protein book. I only type in the recipes that I test out on my guinea pig of a husband. I think he only loves me for my food that I cook. Thank goodness that I love to cook. LOL

Oh, and it's great that I have all these recipes that are low in fat, high in nutrients and relatively low in carbs. My husband was a little on the chunkier side when we met, but I've slimmed him down considerably and built him some muscle. His mother can't cook for sh*t. Don't tell her I said that. LMAO

oh yes I did! And thanks Rob. I appreciate that. You're too sweet. Why hasn't a woman snagged you up yet?? Funny, sweet, nice, works out. you're quite a catch! Oh, and if you ever ate his mother's cooking, damn - you'd say the same thing. I visited her for a few days on the way home and she made me breakfast. Burnt eggs with so much pepper my tongue almost started on fire, hard sausage that clinked on the floor when I fed it to my dog, and potatoes that tasted like she just pulled them out of the ground. Out of politeness I choked it down and snuck some cinnamon toast. Gotta love the woman though. She tried. LOL
