Post Broiled Chicken with Lemon & Honey

I made this for some of my friends that I was entertaining just last week, and it was a hit! Low in fat, mediocre calories, easy to prepare and just yummy!

4 boneless chicken breasts (about 4.5 ounces each)
2 tbsp honey
1 tbsp soy sauce (dark preferred)
1 tsp fine grated lemon rind (about 1/4 of a small lemon should do nicely - grate the intire peel as you will need it for the later part of the recipe)
1 tbsp lemon juice (just squeeze the leftover lemon for this!!)

TO GARNISH INGREDIENTS:

1 tbsp fresh chives (dried will do as well)
lemon rind grated (use what you had done before!)

NOODLES:

8 oz rice noodles
2 tsp sesame oil
1 tbsp sesame seeds (these can be skipped, but it's delish with them)
1 tsp finely grated lemon rind


TO MAKE:

Preheat the broiler. Trim the chicken breasts to remove any exces fat, then wash and pat dry with absorbant, lint-free paper towels. Using a sharp knife, score the chicken breasts with a criss cross pattern on both sides (making sure you do not cut all the way through the meat)

2) Carefully mix together the honey, soy sauce, lemon rind, and juice in a small bowl, and then season well with a little bit of black pepper.

3) Arrange the chicken breasts on the broiling rack and brush with half of the honey mixture. Cook for 10 minutes and turn over. Brush with the remaining mixture. Cook for a further 8-10 minutes or until cooked through. MAKE SURE NOT TO OVERCOOK YOUR CHICKEN OR IT WILL BE DRY!! You want to see juices seep out when you poke the breast. This is ideal!

4)Meanwhile, prepare the noodles according to the instructions on the packet. Drain well and transfer to a warm serving bowl. Mix the noodels with the sesame oil, sesame seeds, and the lemon rind. Season with salt (optional) and pepper to taste. Keep warm.

5) Drain the chicken and serve with a small mound of noodles, garnished with freshly chopped chives and grated lemon rind.

6) Enjoy this mouthwatering chicken!!

CALORIES PER SERVING - 403 FAT PER SERVING: 4.7 G

You can substitute the noodles for a vegetable, but I wouldn't suggest it. These noodles are delish!
