The following recipes will be beef as requested by a member!
SERVES 6 INGREDIENTS: I picked out some good ones!! 1-1/2 lbs. CERTIFIED ANGUS BEEF bottom round steak, cut into 1/2-inch cubes (ANGUS beef is the best to use, however another tender beef would suffice) 2 tsp. vegetable oil (you can substitute with Light Olive oil to cut down on some of the fat and calories) 1 large onion, chopped 1 large green bell pepper, chopped 4 stalks celery, chopped 1 Tbsp. Dry Creole or Cajun seasoning, or to taste 2 (14 oz.) cans stewed tomatoes (Cajun-style if available) Hot cooked rice (about 2 cups cooked) PREPERATION: 1. Heat oil in large heavy skillet or pot; brown beef about two minutes, stirring constantly; drain. 2. Add onions, pepper and celery and sauté for three minutes. 3. Add Creole seasoning and stewed tomatoes. 4. Cover and cook over low heat about 25 minutes, stirring frequently. 5. Serve over hot cooked rice. Quick, easy, and good!
