Another thing....is that unless ur buying ur fish from a seafood market who is not getting it straight in..i'd do some thinking about using tuna/salmon........... when i order tuna......i ask for sashimi grade..or sushi grade.. basically..its fresh out the water....and u can eat..not much room for bacteria growth... the fish u buy in grocery stores...has been stored and frozen...i dont trust it personally..on the flip side..imitation meats are always acceptable....hope this helps....

Thanks Chef, that's great info. I'll search out a fish market and see if they carry sushi grade fish.
